Hello everyone.
Here is what’s in George’s Kitchen this week.
Both Linda and I love fresh fish - eat it or try to eat it at least once a week. This time it’s red snapper, a firm fish with a great texture. We made a great Mediterranean style sauce, some fresh broccoli and rice - and (I can’t resist it) was that ever nice.
Soup. Soup why not make it a meal for dinner. A lot of people, when I suggest soup for dinner, will tell me soup is not substantial enough for dinner. Wrong. The key is to develop a soup that is big, bold, has lots of flavours and is substantial enough to satisfy your appetite.
People love a great, tasty, meal, but what they often forget is this - it’s not what you cook, but how you cook it, with the adds ons such as spices, herbs and sauces that turn something ordinary into something extraordinary. Our mussels recipe proves the point.
It’s true - love is funnier the second time around.

Red Snapper
Red snapper is mild, sweet tasting with a bit of a nutty flavour. It is firm, works well a great sauce. Ours is a Mediterranean kind, packed with different flavours.
